More apocalypse, less angst

this posting is for the folks who wanted to come along to my place on new year’s but couldn’t make it for one reason or other – it was a chill evening with good food and lots of talking sauce… i present for you here photos, our menu for the evening, and a recipe that pete asked for.

red pepper dip (recipe below)
hummus
bruschetta (tomato garlic and olive tapenade topped with jack cheese)
salmon soup
vegetarian chili

apple crisp with soy vanilla ice cream

red pepper dip
5-6 cloves of peeled garlic
2 cups of roasted red peppers (you can roast them and skin them yourself or use roasted peppers packed in water)
1/4 cup nutritional yeast
3 tablespoons olive oil
oregano
1 cup of loose, washed spinach leaves
throw the cloves of garlic into the food processor, then add everything else in order except the spinach and puree until nice and smooth, then add the spinach leaves at the end and pulse a few more times to chop the leaves and add colour.
